Cover It, at Least Partially
Some kind of roof or pergola over the cooking area isn't optional in Florida — it's the single biggest factor in how much your outdoor kitchen actually gets used. Afternoon thunderstorms are a near-daily fact of life for a big chunk of the year, and direct summer sun on an uncovered grill area makes it genuinely uncomfortable to cook outside during the hottest part of the day. Even a simple covered section over the grill and prep area extends usable time dramatically.
Choose Materials That Handle Humidity, Not Just Heat
Cabinetry, countertops, and hardware all need to handle sustained humidity, not just Florida's heat. That means:
- Stainless steel or marine-grade polymer cabinetry instead of standard indoor cabinet materials, which will warp or mildew outdoors here.
- Granite, concrete, or other dense stone countertops that won't absorb moisture the way some materials do — important given how much humidity Central Florida holds most of the year.
- Stainless or powder-coated hardware to resist the corrosion that standard finishes develop quickly in a humid, occasionally salty coastal-adjacent climate.
Plan for Bugs and Screening
Florida's insect population is a real design consideration, not an afterthought. If you're building a fully enclosed outdoor kitchen structure, screening or a lanai-style enclosure keeps it usable in the evening — prime outdoor cooking time — without turning it into a mosquito problem.
